United States congressman Jim Costa dropped in on Los Banos Foods Inc., a California Dairies Inc. processing plant on Monday for a tour. Led by plant manager Dana Horne and Erik Snoke, the company’s vice president of operations, Costa took in information on turning raw milk into cheeses. Upon stopping at the location where cream cheese was processing, the Democratic representative of California’s 16th District joked that he should have brought some bagels. Costa, a third-generation dairyman from the Fresno area, took the opportunity to press the flesh with the company’s employees, from truck drivers to lab testers. One part of the tour that impressed Costa was the plant’s water reclamation system, which saves water from the cheese-making process and repurposes it for a limited set of uses, such as cleaning.
